Lemon Squash


  • Lemon juice  2 1/2 cups
  • Sugar 1 kg
  • Water 1/2 L
  • Citric acid 1/2 tsp
  • Preservative (KMS) 1/2 of 3/4 tsp 
  • Lemon essence 1/2 tsp


 Put a pan on fire. Add to it sugar, water and 1/4 tsp of citric acid. Boil till sugar dissolves. Citric acid will make any dirt present in sugar to get collected on top.


Strain the above syrup into a bowl using a muslin cloth. Let it cool to room temperature.

Add lime juice to the strained syrup.

Take little of the above mixture in a cup and add to it remaining 1/4 tsp citric acid, KMS and essence. Stir till all dissolves. Add this mixture back into the bowl and  mix well.

Strain again and store well.


 Note:
 1 cup = 240ml
Approx. 50 lemons will give 2 1/2 cups of juice
