Frankie

  • Chapatis/Roti 4
  • Egg wash (1tbsp finely minced corriander leaves added to 1 egg beaten with little water)
  • Corriander leaves (finely chopped) 3 tbsp
  • Onion (thinly sliced)1
  • Green chillies (finely chopped) 2
  • Ginger (finely minced) 1inch
  • Turmeric powder 1/2 tsp
  • Cumin powder 1tsp
  • Red chilli powder 1/4tsp
  • Chat masala 1tsp
  • Lime 1/2
  • Salt to taste
  • Pepper powder to taste
  • Oil 3tbsp 
  • Assortment of vegetables/ Paneer cubes/ Boneless chicken bits/ Small size shrimp 2cups
For the filling:
In a large wok on high heat, add 2tbsp oil. When hot add the onion and stir fry until just softened. Then add the garlic, ginger and green chillies.Next add  the spices turmeric powder, cumin powder, red chilli powder, chat masala, salt & pepper. Now add the vegetables in batches , put the ones which take longer to cook first. Stir fry till slightly cooked but still firm.(If  making paneer or chicken or shrimp  just add in place of the vegetables and stir fry till  done. You can also add your favorite veggies and stir fry for a few minutes more.)Add lime juice and freshly chopped corriander leaves. Mix well and keep aside.

On a tawa or skillet on medium heat add 1/2 tbsp oil. Add roti. Brush the egg wash on the roti and flip. Let it cook for a few minutes. Now apply the egg wash on the other side, flip and  cook for a few more minutes.

Take a roti add a few tbsps of the filling and roll into a cigar shape. Repeat with the remaining rotis. Garnish with corriander leaves and serve with sauce or chutney.
